Smoked Brisket Cooked on a Camp Chef Woodwind Pro Pellet Grill
Creating a fantastic brisket is about taking it low and slow. Don’t get me wrong that a hot and fast cook can make a great brisket but when you have time, go for the low and slow. I have made many briskets on my kamado style grill but have not gotten a really good bark. Love my kamado style grill for everything else. So after a lot of research, I splurged on Camp Chef WoodWind Pro to see if I can automate my experience and produce a great bark.
I brought in a 16 lb full packer brisket from Wild Fork. The brisket was trimmed to about ¼ inch and then seasoned with the Angry Beaver Seasoning. You can use any seasoning you like for this. Just make sure you season the brisket heavily on both sides. Then place the brisket on a rack into the fridge for 12-24 hours or overnight. This starts the process of developing the bark.
I heated the pellet grill to 225 F and put the brisket on the grill at 6 am. The pellet grill came with some probes that I measured the air and different parts of the brisket. Every 45 min, chunks of apple wood was added to the pellet grill. I did this for 3 hours until the bark started to form. I checked the brisket every 2 hours and probed it with the Thermopen. Around 8 hours (~170 F), I made a foil boat for the brisket to sit in and cooked it until it came to 202 F. I pulled the brisket at the 12-hour mark and wrapped it in butcher paper and put it in the oven set to 150 F. The brisket was left in the oven for 3 hours. It was sliced into ¼ inch pieces and enjoyed by the family!!
