In the process of preparing for a Chinese New Year party, I came up with the idea of making a beef version of Char Siu. This was my first time trying this recipe and it came out great. As this is not a typical dish for the New Year in northern China (Beijing, Tianjin, etc), this was a different approach to fusing the flavors to beef. Overall, I was very pleased with this process and will just make the brisket alone with the dry season. Very inspired at this point to try all dry and wet marinades from other regions in China to fuse to BBQ flavors.
I used a blend of dry seasoning and made from scratch Five Spice Powder which created the Angry Beaver Char Siu Blend. The 9 lb brisket was put on the smoker at 225 F for 12 hours until it reached 203 F. Every 45 min, chunks of apple wood were added to the pellet grill. The brisket was allowed to rest at 150 F for 12 hours before slicing into chunks and adding the Angry Beaver Char Siu sauce. The sauced brisket/burnt ends was put back into the oven for another 3 hours and just in time for the Chinese New Year Party.
